It has a beautiful pink skin and bright orange flesh with a silky mouthfeel. In this study, we measured the weight, discard rate, Brix%, nutrients, and color to investigate the characteristics of Satogawa pumpkin. Furthermore, the content of gamma-aminobutyric acid (GABA) was measured to investigate its nutritional functionality. The discard rate was 16.5%. The Brix% averaged 7.3, but the samples varied widely. Regarding the color tone, the b-value was higher in the flesh of this pumpkin than in the Hokkaido kuri-pumpkin. The content of GABA was higher in the peel than in the flesh.
